    2019 GCM Coast, Viña Echeverría

    £1775

This natural wine is a blend of Mourvèdre, Carignan and Garnacha with a dollop of Syrah.   It has enticing aromas of forest fruits, cherry, raspberry and mulberry are laced with vanilla and tobacco nuances through to a rounded palate with a fine tannin structure and a persistent fruity finish.

The fruit comes from a combination of vineyards located in the Valle de Maule and the Valle de Colchagua. In the Valle de Maule, the ancient soils are made up of granitic sandy loam, which is formed from granite from the Coastal Mountains. The soils are full of quartz and are mineral-rich, which enables the vines to express their full fruit potential. In the Valle de Colchagua, the alluvial soil offers excellent drainage properties, oxygenation and deep development of the vine’s roots, which creates exceptional conditions for the production of high-quality fruit.

  • <a href="https://temp.wine-republic.co.uk/product/2021-syrah-th-undurraga/">2021 Syrah ‘TH’, Undurraga</a>

    2021 Syrah ‘TH’, Undurraga

    £2450

Cool climate Syrah with spicy, peppery aromas and notes of fresh wild herbs and subtle tar surround a core of fresh raspberries and wild berries. Mineral on the palate, with a tense tannin structure and a vibrant acidity that gives freshness and identity to the wine.

Located to the west of the coastal mountain range, the Leyda Valley has gently rolling hills, exposing the vines to varying levels of sunlight and drainage profiles. The soils are developed from granite rock on the coastal batholith formed 200 million years ago in the Jurassic period. For this wine, the grapes were selected from a small plot of Syrah grown in finely textured soils. The top layer is shallow loamy clay with poor fertility, followed by a sedimentary ‘crack’ clay profile. The subsoil is decomposed granite rock with a diverse mineral structure. The plot is densely planted with 10,000 vines per hectare of French Clones 174 and 470 on a north-facing slope exposed to the sun. The yield was two kilograms per plant, which favours the concentration necessary to achieve a wine with great richness.

2017 Finis Terrae Red, Cousino Macul

    £2895

Finis Terrae, which is Latin for “End of the Earth”, is a flagship red blend that embodies the essence of the Maipo Valley and the winemaking heritage of Cousiño Macul.

A polished Bordeaux-style blend of Cabernet Sauvignon, Merlot and Syrah, it opens with aromas of blackcurrant, cassis and dark plum, laced with cedar, cocoa and a touch of dried herbs. The palate is beautifully composed with ripe yet restrained fruit, sleek tannins, and a graphite-mineral backbone that reflects its Andean origins. Layers of dark fruit and spice unfold into a long, graceful finish that feels both modern and timeless.

For when: the evening calls for something quietly impressive.
Pairs with: roast beef, grilled lamb, or mushroom risotto with truffle oil.
If this wine were a person, it’d be a Pascal Pedro in a Savile Row suit, poised, confident, effortlessly smooth.

Cousiño-Macul, founded in 1856 and still family-owned, is one of Chile’s most historic and respected estates. Nestled in the Maipo Valley, just east of Santiago, the winery’s vineyards lie at the foot of the Andes, where stony alluvial soils and cool mountain breezes create ideal conditions for elegant, classically styled reds. Now in its seventh generation of family stewardship, Cousiño-Macul combines deep tradition with forward-thinking precision, crafting wines that emphasise purity of fruit, balance and longevity.

The Finis Terrae represents the pinnacle of the estate’s winemaking, a meticulous selection of the best lots from estate-grown fruit, aged in fine French oak to achieve harmony and depth. The 2017 vintage, marked by a warm, dry season, delivered beautifully concentrated grapes and polished tannins. The result is a wine that captures the essence of Maipo: rich yet refined, powerful yet precise, a Chilean classic with a distinctly European soul.
